Recipes we Love Right Now

We love getting in the kitchen and creating something easy and delicious.  We love it when we find something that we can make again and again.  As it is starting to feel quite Christmassy here in Bournemouth, we thought it might be fun to share a couple of recipes we love right now that can be great homemade gifts.  Here are two of our favourite recipes you can make today.  Both are simple to prepare and use less than 5 ingredients, because we believe that’s how food should be.  Natural and delicious.

Chocolate Coated Walnut Stuffed Dates from Real Foods

There’s nothing quite like a 3 ingredient recipe for a quick and healthy snack.    This one from Real Foods in Edinburgh uses walnuts, dates and chocolate to create a nutritious treat to have with a cup of tea that you can batch make in literally a few minutes.  It’s a protein boost that’s dairy free, vegan, with no added sugar as well as being raw (they used raw chocolate although I used 80% organic dark chocolate).

You stuff the dates with walnut quarters or halves, melt the chocolate over a pan of simmering water, and then coat the stuffed dates with the chocolate.  Let them set in the fridge for a couple of hours and then dig in.  As simple and delicious as that.

Coconut Granola by Heather Brown

Granola is always a good idea for breakfast.  This granola from Heather over at heather-brown.com is really simple to make using just 4 ingredients – oats, coconut oil, maple syrup and desiccated coconut.  She suggests you can change the coconut for different nuts and add dried fruits once the granola has been baked.

We love to make a big batch to have on hand when we’re on the go.
